Best Chunky Chocolate Chip Bites

(Happen to be GF/ Vegan / Keto Friendly)
These chocolate chip bites are so popular among my family and friends. Even if you don't require special diet, you are going to love these!

Makes 20-22 bites
Maple syrup 2 tablespoons
Coconut oil 1/4 cup (4 tablespoons)
Vanilla extract 1 teaspoon
Monk fruit sweetener (or stevia equivalent)* 2 tablespoons
Oat milk (or other “milk” product) ** 1 tablespoon
Almond flour 2 cups(160g)
Unsweetened shredded coconut 1/2 cup (80g)
Salt 1/2 teaspoon
Baking soda 1/4 teaspoon
Chocolate chips*** (roughly chopped) 1/2 cup (75g)
Pecan nuts (roughly chopped) 1/2 cup (72g)
Preheat oven to 350° (175C) and line a baking sheet with parchment paper.
In a large bowl, stir together the first 5 ingredients (from maple syrup to oat milk) to make a pasty mix.
Mix in the rest of ingredients.
Scoop a spoonful of batter on to a palm of your hand and make a ball. Place it onto prepared baking sheet. Repeat this process to make 20 to 22 balls.
Bake for 15 minuets. Once out of the oven, rest them on a rack until completely cooled.
*You may substitute with brown sugar for non Keto version.
** Unsweetened almond milk, soy milk or rice milk also works; you can use regular milk for non Vegan bites.
*** For vegan, use vegan chocolate chips. I also recommend dark chocolate with high cacao content.
