Pesto Salmon

This easy oven roasted salmon with almond and flat parsley pesto makes an elegant looking meal in no time.




Ingredients for 4:


Salmon fillet 16 oz

Canola oil 2 teaspoons


Almond Pesto:

Raw almond 1/4 cup

Garlic 2 cloves

Italian flat parsley 2 cups

Extra virgin olive oil 1/4 cup plus 2 tablespoons

Salt 1/4 teaspoon

Black pepper 1/8 teaspoon


  1. Preheat oven for 350F. Prepare a baking sheet with an aluminum foil and lightly grease it with canola oil.

  2. Make pesto by grinding almond and garlic in a food processor.

  3. Add roughly chopped flat parsley and grind more.

  4. Add extra virgin olive oil 2 tablespoons at a time and grind more. Add 1/4 teaspoon of salt and black pepper.

  5. Cut salmon in to desired size by gliding a sharp knife with a single stroke, and place them on to a prepared baking sheet.

  6. Add pesto on each piece of salmon.

  7. Bake it for 15-18 mins. Right before its white substance oozes out of salmon is the right time to take it out of oven. Place them on a bed a salad and serve immediately.
