Heirloom Tomatoes with Stone Fruits

Updated: Jul 1

Sweet heirloom tomatoes with peaches and plums tossed with floral and fruity white balsamic. This is the simplest and best summer salad!

Ingredients for 4:

Heirloom tomato 2-3

Stone fruits such as nectarine, peach and plum 2-3

Mint leaves 5-6

Lime juice 1/2 of a lime

Salt and black pepper a pinch

White balsamic 1 -2 tablespoons

  1. Wash tomatoes and stone fruits well and pat them dry. Cut them into 1/6 and put them in a medium sized bowl. If tomatoes are too big, cut it into a bite size.

  2. Slice mint leaves.

  3. Squeeze lime juice into the bowl of tomato and fruits and add salt and black pepper.

  4. Add white balsamic and sliced mint and toss them lightly.

  5. Chill it in a refrigerator for 20-30 mins and serve it on a platter.

* If you need to substitute white balsamic vinegar, I recommend combing one tablespoon of white wine vinegar or rice vinegar with one teaspoon of maple syrup.
